My camera is much smarter than I am. It's also much faster than I am. I use auto settings for as many things as I can, but I do prefer aperture-priority. I do utilize multi bracketing to help me pinpoint the ideal settings for any situation. Then I view the results and settings. If I'm not happy with the finished shot, I go back to re-shoot as needed using manual settings. (Now that I know exactly what they should be). Most action shots are not available a second time. I rely on the camera, but I do set it up for ambient.

Action shots, I always start out with auto settings so I know what the camera is seeing. Then I switch to manual to accomplish effect as needed.

Studio shots, always manual, no exceptions. (it's a controlled environment).

If you study your own EXIF data for each exposure, you can gain a solid understanding of what works and when.
