These are my first tries at using black and white with a small amount of color. Please let me know what you think!

This is my personal opinion, so don't get offended. Your technique is good as far as getting the color on the objects you wanted to and desaturating all the rest.
Of all of them, I think the barn with the small red spot is the one where this technique is most effective. The others look too busy and it looks as if you couldn't figure out what statement you wanted to make. Sorry. I like the dog picture but might find it more interesting in color.

The best use for desaturation of color is when used to spotlight a particular subject or item. The single pez with color illustrates this well. Sometimes it works and sometimes it doesn't.


To show the shape and form of the rail.

The band-aid- Oops.

The wind that drives the windmill.

Are there any tutorials by members on how they're doing these shots? On what technique they use? It might be helpful to everyone else when trying new shots....

Within the basic rules (and a poor approach)
Hue/sat pick a colour channel, desaturate and repeat

Advanced rules and normal approaches
dup layer
desaturate layer
add layer mask and select/reveal the area you want coloured (use selections/ brushes etc to select the areas)

or
desaturate image
undo
select desaturated layer in the history palette
use a history brush to paint in the desaturation where you want it (combine with layers for easy adjustment)

I think, like any technique, there is a time and a place. I don't see the reason behind the partial colorization/desaturation of these except for this one I left in.
This shows individualism, something trying to stand out, "notice me" for a reason.

EDIT: and obviously it was done appropriately. I posted this before seeing what you titled it, which means I 'got it' thru the image first. That is what I call successful imagery.
