I promise, I didn't intend for Texas BBQ to play such a big role in my recent submissions. But when I learned about this challenge, only two ideas came to mind for my locality--and the one that was easiest to capture involved Texas BBQ. If you're from Texas, you just know how big of a cultural heritage this is--and sliced brisket like that seen here is the mainstay against which all BBQ joints are generally evaluated in this state. BBQ is big in other states, too, of course. But here it's practically a badge of identity.

Thanks for the lovely comments! I'm just super pleased that this one managed to make the food still look tasty. I find that rather difficult in culinary photography, and there were a bunch of delicious-looking entries in this challenge.

John: For what it's worth, I'd tend to agree that this is a less distinctively Texan-looking preparation than some. The moist, dry-rub brisket on white-bread buns is correct, but it's missing the brown butcher paper with fresh pickles and onions--and a can of Dr. Pepper or Lone Star alongside it. This place also arguably goes a little heavy on the sauce, but that's a whole different can of worms, as they say. :-P

Congrats, nice idea and with the larger piece blurred in the background.
Last week I heard a report that brisket has gone up in price tremendously. I don't know much about it but I was surprised to see it in this challenge. I think it is a big deal in NY and Texas.

Excellent photograph. This one hits home with me because I'm a BBQ junkie. My 'party deck' out back is covered with grills and smokers. Sometimes on days I'm not cooking out there, i'll fire one of them up just for some aromatherapy. Looks like someone is putting together some sliced brisket sammiches there maybe... BBQ is so very 'cultural' here in the US... it's hard to keep up with all of the variants... Texas, Kansas City, Memphis, North/South Carolina.... there are about 4 different variations just within the Carolinas, especially with the sauce options. I'm gonna go out on a limb and guess that you aren't in Texas :) But I'd hit that sammich head first and not come up for air :)
