i'm just looking for creative ideas for dinner.. once in a while i'll get a crazy/stupid idea with the ingredients i have made available to myself (between monthly grocery shopping). last time i took a can of fajita beef stew, drained out the broth, poured the beef and rice into a wrap and put some shredded cheese on that sucker and microwaved it. mmmmmmmm mmmmmmmmmm.

Pour a can of chicken corn chowder on some pasta and springle some parmesan on. Instant dinner

Put some dried coconut in the food processor to get it to a chopped-fine consistency. Mix with crushed frosted flakes. Use to coat some chicken breasts (I prefer plain fat-free yogurt for the sticky agent) and bake them in the oven. Make raspberry-lemon dipping sauce with raspberry jam and a squirt of lemon juice to thin. Weird enough for you? :D

Can of soup (preferably Chunky) poured over mashed potatoes.
Take some hot dogs, split them down the middle and fold open, then put on any kinds of cheese you have on hand. Bake them til toasty, a nice twist on a simple hot dog.
A good casserole idea: take some ground beef, mix with stuff (examples-tomato soup and greenbeans, vegetable soup, mixed veggies and sauce, etc.) put that over a layer of mashed potatoes in a casserole dish, then another thin layer of potatoes, top with cheese if you like and bake.
My mom made this sometimes in a pinch when I was growing up, and I still do from time to time. Brown some ground beef, mix in mustard. (kind of like a yellow version of sloppy joes) Serve on bread. She called them 'Swallows'. |

My mom always made sloppy joes from scratch - she used mustard, ketchup or barbecue sauce, dried minced onion, and brown sugar (cuts the acidity) - basically dumped in anything that was around, but those were always the base ingredients.

Heh... I'm a bachelorette living in an apartment, and I have a little Black & Decker mini-chopper. It's smaller than my toaster. And it beats the hell out of hand-mincing garlic.

Another weird favorite: Grilled (or pan-fried) portabello mushroom caps, melted brie, fresh spinach, and raspberry jam on toasted sourdough.

There is an awesome cookbook for bachelors out there called A Man, a Can, and a Plan. You'll find all kinds of ideas on there that are fast, cheap, and easy. :)

A coupla pieces of boneless chicken breast
Bottle Russian salad dressing
Jar of apricot preserves
Package of (dry) onion soup (or substitute italian dressing)
Mix russian dressing, apricot jelly and onion soup, pour over chicken in a slow cooker. Cook approx 8 hours. Serve over rice or noodles.
Easy Sunday meal. |

When you've got hamburger but no hamburger buns, and hotdog buns but no hotdogs - make hamdogs! Season your ground beef, roll into a sausage shape, throw on the broiler and turn a couple of time. Toss on a bun with shredded cheese and whatever else you like. Yummy! |

Good lord, eat something healthy.
Roughly dice two zucchinis, a half a red onion, three stalks of celery, and half a bunch of fresh parsley. Sautee in a tablespoon of olive oil for ten minutes. Pour in a can of plain tomato sauce and a can of plain diced tomatoes. Season with a pinch of crushed chili peppers and a tablespoon of fennel seeds. Sautee on low heat for about an hour and a half. Serve over fresh rigatoni, with a slice of goat cheese on top, and freshly ground pepper.

I've done that, minus the jam. Pretty tasty, too. I like to saute the spinach with garlic. |

i did an inventory check... i have none of these ingredients except for chili peppers and olive oil. and pepper of course.

Here's today's"
Italian dressing mix
1 pkg low fat cream cheese
1 can condensed creamy chicken soup
Coupla lbs boneless chicken breast
mushrooms
Put chicken in slow cooker, dowse with onion soup mixed in 1/2 cup water
Cook on low 3 hours
Mix cream cheese and creamy chicken soup, add to slow cooker. Add mushrooms. Cook three more hours on low.
Serve over noodles or rice.
I made this today but I have to leave (on a shoot!!) so my wife and daughter get to chow down and I get leftovers when I get home.

ok.. here's what i went with... cooked some spaghetti in one pot... other pot beef stew, cheese curds, pepper, spice. simmered that concoction together. then threw it in with the pasta. it was really good.
