I'm heading to Honduras at the end of February. I'll bring along my Pentax ist ds and its regular lens 18-55mm. I'd like to bring one more lens...what would you suggest would be my best choice?

A long one.

Sigma 70-200 F2.8 899 Euro
Or
Sigma 80-400 4.5-5.6 (Optical stabilizer) 983 Euro

A wide, fast prime. Not a 50!

Edit: Usually very, very sharp and very useable in low light situations.
A 24 or 28mm would be ideal I think.

Depends on what´s you´re going to shoot. 18mm isn´t very wide on your Pentax (1.6x crop factor, isn´t it?) and 55mm isn´t very long either.
If I where in your steps I think I would go for a wide one but maybe a long one would fit your shooting habits better.

On our recent trip to the Yucatan I took along my 17-40mm zoom, 35-350mm zoom, and 100mm macro. The only lens that I used during the whole trip was the 17-40mm. However, our trip wasn't a 'photo expedition' and we didn't have a great deal of time at each location. It was more about having fun and relaxing.

Be sure to take along something to clean your lenses with, and a laptop or something to dump full memory cards onto is very nice.

A cheap one. From the people I know who've gone, I'd guard all my stuff very carefully. I've had close friends held at gun point, knife point, robbed in the middle of the night, car-jacked, etc all in one trip :-)

Although I've never used it, I've read many good reports from users of the Sigma 55-200 f4.0-5.6. It would fit very well with your current zoom.

If you have a more healthy budget than look at the Pentax FA 80-200 f2.8 ED&IF. It will leave a small gap in your lens range but is one of the better zooms that Pentax have made.

Keep in mind that Pentax glass built it's reputation in the prime lens area and generally speaking their zooms are only so so.

You prolly won't use a long lens. I took at heap of lenses to Hawaii and used the 17-40 almost exclusively (I think I felt sorry for the others :)). The only additional lens you will use as Azrifle said is a wide wide fast prime 24 or less.
