One of the things I like to do besides photography is cooking. I thought I would share a few of my original recipes with the forum for Christmas... Enjoy...

From Setzlerテ「冱 Kitchen:

Seed Bread (Bread Machine)

1 1/8 cup water, lukewarm
3 1/3 cups white bread flour
2 tbsp dry milk
1 テつス tbsp sugar
1 テつス tsp salt
3 tbsp butter
1 テつセ tsp dill seed
1 テつセ tsp celery seed
1 テつセ tsp caraway seed
1 テつス tsp fast rise yeast

Put these ingredients in your bread machine in the order listed and run the machine on the basic bread cycle. You can turn this recipe into several variations of more seeds, but keep the total seed quantities approximately the same. Itテ「冱 deliciousテ「ツヲ

Garlic/Bleu Cheese Bread (Bread Machine)

1 1/8 cup water, lukewarm
3 cups white bread flour
1 テつス tbsp dry milk
3 tsp sugar
1 テつス tsp salt
1 テつス tsp vegetable oil
1 テつス tbsp garlic paste
テつシ cup crumbled bleu cheese
1 テつス tsp fast rise yeast

Put these ingredients in your bread machine in the order listed and run the machine on the basic bread cycle.

Johnテ「冱 Breakfast Fritatta

Canola Oil to cook
2 potatoes, peeled and diced テつシテ「 thick
6 sausage links sliced 1/8テ「 thick
1 large red onion, julienned
1 red bell pepper, julienned
6 scallions, sliced 1/8テ「 thick
10 large eggs, beaten
salt and pepper to taste
2 cups shredded sharp cheddar cheese

Preheat oven to 325 degrees. Coat a large cast iron skillet with oil and sautテδゥ potaoes, sausage, onions, and peppers for about 5 minutes. Add scallions and eggs and season with salt and pepper. Stir for about 30 seconds. Top with cheese and place in the oven. Bake for about 20 minutes. If the top is not brown and crusty, turn on the broiler to brown the cheese for about 20 minutes. Remove from oven and let stand for about 3 minutes. Slice into pie wedges and serve hot.

Beer Glazed Pepperoni

16oz of your favorite beer
1 テつス cup packed brown sugar
1 long pepperoni

Place the brown sugar and beer in a sauce pan and bring to a slow boil. While itテ「冱 boiling, slice the pepperoni into テつシテ「 slices. After the beer and sugar have been boiling for about 15 minutes, add the pepperoni and continue the boil until the glaze thickens. Serve warm or from a crock pot.

Chez Setzler Salsa

1 28oz can of diced tomatoes
1 28oz can of tomato puree
1 can white corn, drained
1 can black beans, rinsed and drained
1 medium onion, chopped
1 green bell pepper, chopped
テつシ cup lime juice
1 tablespoon vinegar
1 tablespoon salt
1 tablespoon garlic powder
1 tablespoon diced cilantro
3 jalapeno peppers, finely chopped

Combine all ingredients in a dutch oven or stock pot and bring to a slow boil. Reduce heat, cover, and simmer for one hour, stirring occasionally. Serve warm or at room temperature and refrigerate the leftovers.

This is a mild salsa. If you want to make it hot, add your favorite hot sauce in テつス tsp increments until you get it where you like it. Donテ「冲 use cayenne pepper sauces. Use a habanero or serrano sauce.

Setzlerテ「冱 Frozen Margaritas

6 oz tequila
6 oz frozen LimeAde concentrate
4 oz triple sec
4 oz frozen lemonade concentrate

Pour all ingredients into a blender. Fill the blender with ice. Blend until smooth. Put in the freezer for 20 minutes to thicken. Re-blend until smooth. Serve in a salt-rimmed margarita glass.

you're making me SOOO hungry. Now I must go grocery shopping and make salsa and frittata!

That Garlic/Blue Cheese bread sounds soooooooooo good. to bad i dont have a bread machine :b

They all sound great!

I have a recipe for Italian bread that I mix in the bread machine and then raise on the stove and bake. Everyone loves it. Especially toasted. I will try to post it after Xmas :)

I do that sometimes as well. I like to cook the bread on a stoneware pizza pan in the oven.

Wow, that really did make me hungry. I find the beer glazed pepperoni particularly interesting. I wish I still had my bread machine too. :)

The beer glazed pepperoni works particularly well with dark beer like Guinness. But then again, Guinness is just good no matter what :)

I will add one of my favorites

Mango Salsa

4 mangos, diced
2 avocados, diced
2 green chiles, diced
2 cups red bell pepper, diced
2 tomatoes, diced
1/2 cup green onion, chopped
1/2 cup olive oil
1/4 cup white wine vinegar
Salt and pepper, to taste

In large bowl, stir together mangoes, avocados, green chiles, diced red bell pepper, tomatoes, chopped green onion, olive oil, white wine vinegar, salt and pepper to taste.
