I saw the landscape, couldn't figure out what animal it was. The nose is overexposured. Think I would have cropped everything but the eye.
That way the landscape would be a bit more visible in the Cow-Lens.

Yes you are right, the DOF is not where it should have been. The horses head is out of focus but the mirror image is good. The light is good as well.
