PS - as for taking photos of people - I really do it all the time, and nobody ever says anything. Just give it a try.

Wow, now this is a slice of life. I have no idea why she'd be hitchhiking, but she has quite the voice, I'm listening right now.

So you missed one opportunity - photo of Katie the Hitchhiker. Now you have the chance to take another. Go for the live shot. I'm thinking she's very appreciative of the ride and maybe even give you a few extra shots. The worst that can happen is that she says "no".
