It's just a different method of B&W conversion. Here's a good DPC tutorial...It can be a fussy method if you want, but it gives you a lot of control over the mood of the shot.

Ha! Yes, he just just gotten his Spring shave. Seth has an extremely thick double coat that he seems to loath at times. When I looked at this picture, the first thing that came to mind was that it looked like he was wearing an Elizabethan ruff collar. The stink eye is probably from me fluffing the "collar" right before I took the picture.
