I like this shot a lot, but I feel the texture on the hands it a tad oversharpened and the salt is blown out (at least on my monitor).

I like your idea here. Even with some of the light spots overblown this works very well. I think it's because the key elements of his face have detail - his eyes and mouth. And light is definitely one of the subjects here.
