Shot with speedlight.

This is the start of a wicked hot chili chutney I made today using about 40 chilies I grew :)

Approx ingredients:
40 Small Chilies finely chopped (Probably the equivalent of 5-10 scotch bonnets)
3 Large Onions
2kg Tomatoes
750g Cooking Apples
1 Tbsp freshly ground coriander seeds
1 Tbsp freshly ground cumin seeds
1 Tbsp freshly ground black pepper
1 Tbsp freshly ground mustard seeds
whole clove of garlic crushed
finely chopped ginger
300ml vinegar
300g brown sugar

I think thats about it :)

sounds DELISH!!

where is the fire extinguisher?? hehehe
I assume you wore plastic gloves while dicing this??? the pepper colors and textures would make a fabulous image in their own right!

Ummmmm.... this looks delicious. Anything starting with chilies and onions cannot go wrong! I froze 2 bushels of chiles (the New Mexican spelling) this fall and will use them for all kinds of things. Must try this recipe though. We are going back to New Mexico next weekend - looks like I am going to have to pick up another bushel of chiles to make chutney...
