The title is from a PBS cooking show with a Mary Ann Esposito who spoke the worse Italian I have ever heard, even from me! LOL! But I picked up some ideas from her and came up with:
Chicken Caprese Pizza:
Ingredients: Chicken, Plum or Roma Tomatos, Fresh and Powder Garlic, Shredded Mozzarella Cheese, Fresh and Dry Basil, Olive Oil, Pizza Shell of your choice (I prefer Boboli Thin Crust but tonight it's Pillsbury (whose idea of a pizza shell is rectangular, yeesh!)) Salt and Pepper.
Chicken: I use either one boneless skinless breast or 3/4 tenders depending or their size. Season the chicken with Garlic Powder, dried Basil, Salt and Pepper to your taste. Heat fry pan and add enough oil to coat the bottom of the pan. Sear top and bottom of chicken on high then reduce heat to low medium cooking 3-4 minutes on each side.
"Sauce": Mince 3-4 cloves of fresh garlic and place in a small bowl or a cup. Add 1-2 ounces of olive oil to the garlic and a teaspoon or so of dried basil. Let it steep. while the chicken is cooking.
Core, seed and dice 2-3 tomatos. Chiffonade (sic) several leaves of fresh basil. When the chicken is done, remove to paper toweling and let rest 5 minutes. Slice and dice the chicken to your liking.
Prehat oven to Pizza shell's directions. Spread Olive Oil/Garlic/Drie Basil mixture on top of pizzs shell. Cover with the shredded mozzarella, chicken, tomatos and basil and season with salt an pepper to taste. Baked to Pizza shells directions. Voila! Having it tonight.
I also use the base ingredients in the image for a chicken salsa and a chicken pasta dish. There are tons you can do with them.....just ask Mary Ann....but do it in English! LOL!

Thanks for the comments and faves! I made the pizza last week and it was marvelous. A commentor asked about the lighting: I used two clamp lamps each with a 100w bulb on either side of the subjects pointed up to a piece of white poster board over the shooting area. That's it. It was also late afternoon so there was some ambient light from the windows but not much as my blinds are always down.

nice to see a dark bg used after seeing so many food-on-white shots. slightly too much glare on garlic, colours could use a teeny bit more saturation. 7
