3 lb onion -- peeled
1/2 cup butter
1 1/2 tsp pepper, black
2 tbs paprika
1 bay leaf
3/4 cup flour
3 quart beef bouillon
1 cup wine, white
2 tsp Salt
1/2 lb Swiss cheese
French bread

Slice onions, 1/8 inch thick. Melt butter, place onions in it, saute slowly for 1 1/2 hours in a large soup pot. Add all other ingredients except bouillon, wine and salt, saute over low heat 10 minutes more. Add bouillon and wine and simmer 2 hours. Adjust color to a brown with caramel coloring or liquid browning sauce. Season to taste with salt. Put in refrigerator overnight.

To serve: Heat soup. Fill oven-proof casserole or individual oven-proof bowls with 1 cup soup, top with 3 one-half inch slices of French Bread and top with shreds of imported Swiss cheese (Gruyere preferred). Place under broiler to brown, approximately 5 minutes at 550 degrees. garnish wtih dried chives.

Nice textures and shapes, sharpness, and pretty good composition and DOF - wish for just a touch more DOF. Angled tray would be better to reduce the rectilinear line on the left. Very nice image, hope it does well.

Often a soft focused foreground does not work very well but it does in this image. Noise reduced perfectly without the "smoothies" and the technical quality of this image is superb. Yellow seems a little overdone to me but unsure that it is not absolutely right for this composition.

Would of been nicer to see the whole dish in focus opposed to half being blurred. Nice touch with the onions on the side though :)

I was toggling between a 6 and 7 for this one, but since I've a sucker for food, it was a 7. I do like the composition very much. The lighting gives it such a great atmosphere. I just think there's too much border and the tray (I'm assuming) that the coup is on doesn't work so well. It does look like it comes from a culinary magazine though. Great use of the onions as well. The dried oregano may have been too much.

My eyes are fighting between the onions (sharp, in focus) and the white rim of the bowl(blurred) and the soup (soft focus). I like the concept, but the image is fighting itself. Having the bowl closer to the onions and a deeper dof might have helped.

The dish itself is kind of lost in this composition - might not have guessed what it was without seeing the title. But it looks awesome!

Composition and lighting are good. Color is good, the broth and carmelized onions look appealing. I like the whole onions on the the left, makes a nice balanced shot. Perhaps a bit more DOF would have helped, I don't like that the soup is just a blur beyond the crouton.

Focus seems to be sharper on the onion than on the finished product. Can't wait to see the recipe for this, yum!
