This is Alessandro, he and I worked together in this quite small kitchen for a while.
A professional kitchen has to be well lit by law, so there are three neon bulbs wacking out the lighting here. It's an effect I thought would be cool, but I wanted more light on him as well, so I snuck a little flash off on the right side by the pans, and another on the lower left for fill on his body. This was all shot during service so I had about three minutes to direct and shoot everything, and I was shooting from the kitchen door so it was quite rushed as people were stepping over and around me... Either way quite fun though!

Hey didn't I suggest you do a shot like this a year or so ago? :-) Glad that you shot from the safety of the cold side Chris, and you were really brave to shoot during service no less with a 3-min window. Great work, grats on what the blue!

PS I was looking n voting on my Ipad last night, and it's got that retinal whatever thingy that makes Pix go POW, so ran thru my votes just now to see how diff they look on the screen, Well I can't believe I'm going to have to say this, but It looks even BETTER.... hum where's the 11 button?
I love it! His expression is priceless. Was it posed? If yes than he is really good at drifting away with his thoughts - or at least looking like he is far far away :) that knife amazing touch - makes one think what he is thinking so deeply about. And I love the pp.
