Apple & Gruyere Cheese Frittata with Turkey Sausage and Spinach
12 servings
30 ounce egg
2 ounce green onion sliced
1 tsp. Kosher salt
1/8 tsp. black ground pepper
2/3 cup Skim Milk
1 tsp. Lemon juice
20 ounce Red Bliss Poatoes
2 each Red apples
1 Tsp. minced Garlic
6 ounce yellow onion sliced
1 tsp. Olive Oil
10 ounce fresh baby spinach
5 each Turkey sausage patties
Preparation
Pre heat oven to 300 degrees.
Grate the cheese and mix with green onion Kosher salt, black peppe,eggs and skim milk, et aside.
Wash potatoes and slice into 1/4 “ slices
Wash apples, peel, core and slice into 1/4" slices toss with lemon juice.
Set aside for later use.
Heat up the skillet to medium-high and spray with the Olive Oil.
Cut the sausage into small pieces and brown in Skillet, drain add onion, garlic, and saute until tender.
Blanch Spinach in boiling water, drain and remove (squeeze) all liquid
In mixing bowl toss balanced spinach, apples, potatoes with sautéed sausage
Take a pan large enough to bake the frittata line twice with plastic wrap.
Fill with the frittata filling and pat down to make even.
Pour the egg mixture over top of the filling, cover with foil and bake for an hour or until temperature reaches 185 degrees and Frittata has a nice brown color
Remove Frittata from pan cut down the middle and cut each half into 6 wedges, a total of 12 servings
