Improvised Christmas Cake Recipe

Mix, cleaned Raisins in colander and pour boiling water over them and let sit
2 cups golden raisins
1-1/8 cup dark raisins (or currants if preferred)

Mix fruit (listed below), raisins (from above) and juice and let stand overnight
1/2 lb each of red and green candied cherries
1-1/2 to 2 cups of mixed fruit
1/2 lb of dehydrated pineapple
1/2 cup of Five Alive Berry Citrus juice (or Orange Juice)

Mix almonds and walnuts with 1/2 cup sifted flour (part of flour amount listed below)
1/4 lb slivered almonds
1 cup of walnuts

Sift flour, nutmeg, salt, soda, cinnamon
2 cups of flour
1/2 tsp each of nutmeg, salt, soda and cinnamon

NEXT DAY

Mix nuts into fruit (keep aside)

Cream butter and sugar together
1/4 lb butter
1 cups each of brown and white sugar

Add eggs to butter/sugar mixing 1 at a time and beat after each
5 eggs

Add remaining flour (see above) alternately with milk and flavouring
1 tblsp milk
1 tsp almond flavouring

Add fruit and mix well

Put batter in parchment lined tins (for this batch I used one loaf tin and a medium size spring form pan - parchment on bottom and butter greased around side)

Bake approximately 3 hours at 275 degrees with tray of water on bottom rack.

Is that fruitcake? Nothing beats a good fruitcake-(or at least the Citron growers association says so)
