I took this shot today of these hands-they are approx 7-10 stories tall, does anyone have any tips on making large subjects interesting?

These are neat :)
The only way to change the interest level of these photos is to find some way to put the size into context. There is nothing in the image that allows the size of the subject to come into play.

That is so true, I cropped out some boring tips of trees at base of hands but maybe that was a mistake?? |

Probably not a mistake. There would be a fine line here... u don't want something distracting in the image.. there is not likely an easy way to achieve size perspective with this photo.

If this is possible, you could get a person to climb the hands.
Or,
Wait until a bird was flying by. ( A flock of birds would be needed.)
Or,
Get a vantage point really far from the object and try to include contextual elements.

You also could try to get further below them and shoot up using your widest-angle lens. That tends to add more depth to a photograh, like when people take pictures of tall buildings or trees that seem to loom at you in a picture.
