MMM, eatin' healthy is awesome!

You forgot a fat slice of onion and a piece of cheese (any kind is good with me) ... I'll also take spicy deli mustard over the yellow kind!

People who don't like tofu have (a) never tried it or (b) have never had it prepared properly.

Most pad thai? That stuff you thought was egg? Probably actually tofu.

Miso soup? Hot and sour soup? Tofuuuuu!!!!!

A taiwanese noodle house I go to sometimes serves tofu jerky as an appetizer, and it's pretty good, too.

FWIW, I'm a meat lover, too, but have a definite appreciation for really good tofu dishes. Especially the chocolate mousse. ;-)

WTF exactly is tofu??

It's soy protein, basically. Bean curd. Tofu has very little flavor on its own, but needs to be cooked with sauces or marinades, as it picks up the flavor of the sauces it's cooked with.

On its own, it's quite bland, but prepared properly, it can be quite tasty.

Hmm. I'm more in favor of the trans-fatty acid, artery cloggin type stuff until my doctor says otherwise.

By the time your doctor will be able to say otherwise for sure it will probably be too late.

Here's a handy technique for meat-eaters who find tofu a bland, mushy substitute for meat:

Take a typical tub of firm tofu in water and put it in the freezer overnight. Once it's frozen into a solid block, let it defrost.

You can now take the slabs of tofu and gently squeeze out most of the water -- it will have a texture and behavior somewhat similar to a kitchen sponge.

It can now be cut into chunks or strips for pasta or stir-fry dishes, or torn into smaller bits as a substitute for shredded chicken, for example in a chicken salad recipe. It becomes much more meat-like than typical tofu.

It will absorb large amounts of sauce if given the chance; be careful when you bite into it, as the center can still be quite a bit hotter than the outside!

Wow, what lengths some people go to make complicated recipes that include tofu.
We often have tofu as accompaniment to dinner. The usual way I prepare it is:
Cut tofu into smaller blocks
Grate fresh ginger and put on top of block
Add a little soy sauce
Sprinkle on some katsuoboshi ("shaved fish")

Enjoy. It is possible to eat with chopsticks, you know.
The ginger is really good for keeping colds away.

(For those of you who don't know, I live in Japan.)

I knew you would ... : )

It has substantially less tensile strength than the typical cellulose sponge though -- sprinkle on some Ajax and try to clean the sink and it will still fall apart.
