Could I take a photo, print it out, and then take a photo incorporating that print as an entry? Would this still be legal? I've seen people use their computer screens to have a picture on it so I suppose this would be something similar?

Yes it is as long as the photo isn't the main subject so to speak...no, that doesn't read right.
Okay Makke...you remember the art clause...right?? Okay...well the photo is classed as art...so treat it the same way...!

Yep, Scalvert did one for the impressionism challenge I think.
You have to make sure you include enough "live elements" to make the picture used more of a background object, and not the main subject.
