k, got the dishes done... hafta take a break
then, on to dinner... what to fix.. what to fix... it'd be so much easier if I were cooking for 2 or more - cooking for one seems like such a waste and it's hard to find portions for 1 w/o the same price you'd pay to feed 2 people. |

Definitely true. Sometimes you just gotta cook the 2 or 3 meals and freeze the leftovers though. A lot of foods taste good reheated a couple weeks later (pasta and meatballs, stirfry (just make fresh rice), and lots of other stuff. :) Even hamburgers you can cook 2 or 3 and freeze.

thats why you cook for 2 and use the second half the next day for lunch or freeze. |

it's really hard for me to get excited about leftovers. i'm almost diabetic and have to eat on a regular basis (3 meals, 4 snacks) so i am eating a lot - cooking a lot - just getting too monotonous, i spose. |

I hear ya - I eat the same stupid quick meals over and over and I get sooooo tired of it. If I cook pasta, though, I cook the whole box. Toss in a bag of meatballs and I have 3, 4 meals done. I may have to eat a lot of meals, but hey, at least I don't have to cook pasta 3 times. That would suck.
And I'm not excited about leftovers - but if you're gonna have pasta, you're gonna have pasta, ya know?
