The sensor size. Just as Canon's 1Ds/1DsII are considered full-frame sensors because they are the same size as a 35mm frame of film, the ZD uses a 48x36mm sensor.
Regardless of the other differences between those two brands (such as anti-aliasing filter, sharpening, saturation, etc), I think you would see some difference from packing 22,000,000 pixels in 1584 mm squared (48x33mm) as opposed to packing 17,600,000 pixels into 864 mm squared (36x24mm) as Canon has done. Frankly I'm not sure what that difference would be but I think it would tend to be noticeable as you (A) enlarged the prints and (B) lessened the viewing distance between the print and the subject.
Of course, what the heck do I know.
