oooh!! I just saw this! Is the pipeline really closed? We have Virginia peanuts here...

Yep - got my jar of #4 today and it is beautiful!!! Pancakes for breakfast tomorrow. :-)

Well just finished boiling the last batch of sap, #7, which is from another supplier, also all from sugar maples, but he's about 40 km from me. However, so far as I can tell it is a dead ringer for my own Red Queen (generally I don't try to compare syrups when one batch is still warm and the other cooler).

@ vawendy...eeek the pipeline is pretty much closed...but if you don't mind some of the batch which I just finished making, and if you can scare up something nummier than peanuts, we may have a deal! PM me.

From what I've read a lot of the color variation (and flavor) has to do with specific bacterial contamination. While taphole contamination can decrease sap flow the presence of certain species of bacteria are known to affect color and some enhance flavor as well. I suspect galena's red color has something to do with whatever late season bacteria is now growing in her sap.

But never fear, I don't think many bacteria survive being boiled at 220 degrees...yer safe!!!

Yep, and thanks to Kyle I now have a matching batch of Red Queen. I'm not sure yet, cause I haven't tried them both at the same temperature, but so far mine seems a little sweeter and his more mellow. I should try a blind taste test.

Either way the colour is just as amazing as mine!!

Well all I have left to do now is clean my equipment and stash it away for next year :-(

Now, I just found this funny black knapsack upstairs in my room. Been there for awhile, just sitting there the last couple months or so. Inside are 4 long tubular objects, and a big rectangular bendy thing that looks like some kinda light. It all looks like it somehow attaches to this odd-shaped black box-thingy that has a long strap attached to it. Yellow lettering on it says N I K O N.

Any idea on what this stuff is or how to use it?

We do have cannons at Colonial Williamsburg, Yorktown and Jamestown -- but they would be WAY too heavy to ship...

Cannons I get and actually would be kinda cool to have my own, but yeah, kinda heavy to ship...but Canons? What are these things you speak of? *scratching head*

vawendy, if you're stuck then do the tourist thing and google the name of your town and search for regional delicacies. Who knows maybe squirrel pate is on the list!!

I suggested that a while back... and I know for a fact that she would have had immediate access to a host of Canon stuff...right Snaffles ...but Nooooooooooooo she went the other way. :O)

Well, just posted the *graduating class* pic for this year, samples of batches 1-7 in jars all the same size. *sigh*...

Oh yeah, I bumped my head the other night and woke up remembering what Nikon is...so snaffles is baaaack!!! Muwahahahahaaaaa...

Thanks for bringing everyone on this sweet and sappy (!!) journey! I am guessing that the Ottawa gtg with Lost might have to include some taste tests!! We can compare the UCV syrup with yours. Seriously it was fun reading all about your running sap!

@ frisca...Mmmm Indian candy...I'm bribable ;-) and more importantly, haven't heard back from a couple other people, so PM me...and as of now the pipeline is closed for another year.

@ Enlightened...oh yes, there will be syrup at the Ottawa Lost gtg!!

Oh and fwiw...today in a grocery store I saw syrup produced by KCAT (local University of Guelph campus) 500ml going for $15.99 and 1l going for $30. Wow, and this is LOCAL!! Holy liftin!

I have no idea what is being shipped, but I would strongly recommend that you have it shipped to the UPS Store in Ogdensburg, NY. It will be much quicker and cheaper.

If you know when it will be there, maybe Uncle Raymee can pick it up for you too. :O)

Hmmmmmmm if it involves food, you might want to check with the Customs folks as they are right picky with that. Might be wiser to eat whatever it is on the USA side of the border... and yes I am quite willing to volunteer to do just that.

I have after all had the great pleasure of enjoying the culinary skills of our dear friend Bear_Music. :O)

Well, Bear's sending preserves, as are most of the others. I haven't checked out the customs site yet but will do. And hey, if they are indeed so picky, why is it I can go to Price Chopper and load up on all manner of foodstuffs identical in basic nature to what's being sent me, and have no problem? Makes no sense at all.

I'm honestly a bit concerned, and don't know where to send a bag of dried chilis. Since they are an agricultural product, I'm guessing I might want to not send them through to Canada?

IMHO sending to Canada sounds best, dried chilies don't weigh much so should be little extra expense, if any. FWIW I've had no problems receiving stuff at home. Off to check Customs website.

Because the foodstuffs sold at the retail outlet have had import duty fees paid.
