I will be traveling to Nice, France and the Lake District in Italy for 2 weeks in early September.
Should I bring my D300, D3s (too big?) or even my D40x?
Which lens? 28-300mm f3.5-5.6, 50mm f/1.4, 70-200mm f/2.8 (too big?), 17-55mm f/2.8 or buy something new?
Should I bring a flash, tripod or anything else?
Your suggestions would be appreciated.

For our lakes (Italian lakes), surely the widest of your lens :)

ETA: and tripod, of course :)

Why not take two?

Cover yourself with good glass, take the 17-55 and the 70-200...

+1. i'd be ticked if i missed shot for leaving a lens home. when i go away i bring ALL my toys.

As for the body? Which one do you feel like taking? If you're looking to travel with two lenses, perhaps two bodies, two lenses, that's a pretty fool-proof plan and not too terribly heavy.

Skip the tripod, taking the best performing body ISO wise will pay off,as it's gonna be easier than a tripod for sure. If you want a tripod, perhaps something like a Pedco Digital UltraPod that is super easy to carry. (I hate carrying a tripod - even just to the beach, and they draw too much attention.)

Flash? Are you shooting people? If so, then I'd probably say yes, because it makes so many great shots possible.

Other stuff to bring? The lakes would love a circular polarizer, and a strong ND filter might be fun if you do bring a small tripod, but that will also make you want a remote shutter release.

Clean those sensors before you go, and make sure you've got all the memory cards and batteries you'll want. Also, be sure to actually take your charger, I've forgotten mine more than once. Fortunately I have a really silly number of batteries due to having four bodies that all share the same batteries. (D60, 20D, 50D, 5D)..

I'm going to go against what the others are saying. I'd take your D300 with the 17-55 (wonderful lens) and then I'd be inclined to take your D40x (nice and light) with the 28-300 (I know this is a FX lens, but you've got wide covered with the 17-55). Then you don't need much else. Travelling sucks with tons of gear. You can always find room for the 50. I always find the 70-200 is too heavy for a trip and then I just wish I'd left it behind.

If you are going to take very much gear to go walkabout with, a good shooting jacket with pockets for the lenses and gadgets is a great way to haul the gear around.
A light monopod with enough sections to fold small enough to fit into your traveling bags would be useful as well. It can get you a couple of stops of shutter speed, and is almost as stable as a tripod if you can find something to lean the camera against while you have it on the monopod.
A good P&S cam can be very useful too, for street shooting when you don't want to intimidate the locals with a big outfit, and for just having a camera handy for those unexpected "moments".
If you have time before you go, you might try a few days, or half days, of hauling around everything that you feel you would need on the trip, with a different set of gear each day, and just see what works best for you.
Some insurance on your gear might also be a good thing to have. You could ask to see if it's on your homeowners or other policy, or could be a temporary add on to a policy.

...or a real long lens if you come to Canada since one cannot see across some of our lakes.

Seriously, it all depends on what you want to do. Personally, I normally carry the Canon EF 24-105mm f/4.0L IS and the Canon EF 70-200mm f/2.8L IS USM whenever I travel, as well as two camera bodies.

Those are my preferences but perhaps that is not what you want.

D300 w/ 17-55Dx and 28-300 (= @ Dx 42-450)
That would be my travel setup with spare batteries/charger, cards and a monopod with QR plate head.

Buy a new pocket sized camera and leave the DSLR at home while you enjoy the vacation.

Now...which pNs do you bring with you?

I've taken several trips to Europe. On my first trip, I took my DSLR. Every subsequent trip, I brought a smaller PnS (Canon G7) camera and enjoyed the trip much more. Now, I would take my S100.

The question is: Are you going on this trip as a vacation? or as a photo trip? What are you looking to photograph? Are you going alone? How accomodating are your travel companions when it comes to your photo hobby? Personally, I grew very tired of carrying my DSLR around and found that it was quite obtrusive when trying to capture candid scenes.

Good objective questions.

If is a vacation then PnS or anything small and pocketable and enjoy the trip. If can not live with the thought then your D40 and 28-300mm f3.5-5.6 and enjoy the trip.

FWIW, On my trips to Europe, I was traveling alone (mostly) and I was there for work. When I was in a specific town, I usually had a company car, but traveling between cities, I took the train and did a lot of walking. I got some good shots the time I took my DSLR, but it was a huge pain and I never used a lot of the gear I took. So I took my small camera. I took more and better photos and I wasn't as burdened.

I went to near Barcelona fishing for few days, just carry on so I took my 20d and efs 17-85 is was ok but missed my 5ds and something a bit wider, gonna take my full bag next year. But just sat in a boat for 8 hours,

Got this but had no tripod or release so camera was burried in gravel and a bit of tape and an olive to hold shutter open.

I do travel for work quite a lot. Usually 2-3 hours car rides between cities. When I have a chance I visit as much as I can. Even though tempted couple of times to take my 40D I ended up with a Fujifilm FinePix F200EXR and later with a Olympus PEN E-PL1...

After my purchase of the Apple iPhone 4S i tend to shot more and more with the phone and be surprised of the results (... and submit some to DPC)

So if you travel the lighter the better, unless you have some precise (photo) objectives to achive.

We are going to Nice for 7 nights. Will be based in Cap Ferret but taking day trips from there.
Then driving to Lake Como & Stresa for another 3 nights each.
We will have a cur for the entire trip.
This is a site seeing vacation. We have never been there before.
My concern is lugging around a bunch of equipment.
When we go somewhere now I usually take my D3s & the 28-300 but I don't know if it's enough or too much.
My wife has a PnS that I could take.

I take my favorite, most comfortable body (i.e. The one I'm most comfortable with....) and my 18-200.

Yeah, sometimes I'd rather have a slightly different setup, but my D7000 with that lens is my walk-around setup and I don't miss much that I want with that.

Take your D3s and the 28-300....
