When you rent a movie and have this choice, which do you watch?

Sometimes both! :P I like knowing what was left on the cutting room floor for budget or time constraints!

Directors cut. I hate missing some of the good scenes that get scrapped because it makes the movie 'too long' or because it didn't 'add to the story' but STILL fun to watch.

directors cut and unrated cuts. if the director had a vision i want to see it, not the version that was cut down to make it more theater friendly or to appease the ratings board.

director's cut cause that's how the movie was supposed to be in the first place.

Yep, director's cut. That's how the movie was supposed to be before "studio excutives" meddled with it.
