I've been distracted with video for quite some time now but need my dose of photography back.

I switched to Canon after years with Nikon (For video purposes). I wonder if there are any good online workshops or books that people have read about the smaller details of your camera? As an example, I only recently found out I can have a set of focus points as presets...which help when I'm on the move. I'm going through the manual cover to cover but would love a great workshop that helps implement these features to get the most out of the camera. I've turned to Youtube for some help, but a lot of it is the basics...

There are tons of third party books made about each body and ways of putting the gear to work in practical ways, as well as presets and whatnot that you can download. Personally, I've perused these, but never found the need to purchase anything. Your needs may differ, so I suggest you check them out. Go to a bookstore and you'll find books for pretty much every single body that's out there, peruse them and see if they're worth your time. Not sure about workshops though...
ETA: forgot you were in Japan... that might make things a bit more difficult... but having never been to a Japanese bookstore... don't know about that one. BN.com maybe?

Amazon Japan tend to have most books available that you would get on the Amazon U.S site. Bookstores...not gonna have much luck finding anything good in English. Thanks!
