I need one!

I want to be able to understand colour curves and levels beyond just Photoshop.

Can any one point me in the right direction?

Levels is just a subset of curves; anything you can do with levels, you can do with curves, and much much more.
So focus on learning the curves tool. It's really not hard to understand, and the best way to learn is to do.
The curves tool is just a 2-D plot of input value(horizontal axis) vs. output value (vertical axis). A diagonal line from lower left to upper right means output equals input, or no change. Move the uper right end to the left, adjust white point, move lower left end to the right, adjust black point. Drag the curve off the diagonal, you can change contrast, darken, lighten, etc.
By adjusting the individual channels, you can change white balance; much more flexible than automatic adjustments.
You can do a million more things with curves, it is one of the most powerful adjustment tools available. Again, if you remember how it works, it's intuitive.

I suppose i'll have to just explore and fiddle around.

I always flip the default orientation of the graph so that 0=0 is in the lower-left corner. 100=100 in the upper right. To drag the curve downwards and lighten those values seems much more intuitive to me.

This thread has some examples of how I use them to change colors around in a recent abstract (includes screenshots).

Y'all want to know something hilarious??? When I did my student teaching, our program was for an entire school year. And I taught...get this...MATH!! Pre-algebra and 8th Grade Math...LOL
