I'm an outdoor cooking junkie. 90% of what I cook gets cooked on a grill, smoker, or griddle on my deck. I spent the last 13 years or so doing social media for a grill manufacturer and another an outdoor cooking supply store which afforded me the good luck of having a lot of amazing equipment to work with. I have a couple Kamado grills, a gas fired pizza oven, an amazing pellet smoker, a gas grill, another charcoal grill, and a few other goodies hanging around as well. I love trying to make appealing photos of what I have cooked, and I usually just do it with my phone.

These photos show a recent cook I did with some really nice lookin' beef short ribs. I like to smoke these guys for about 4 hours in some hickory smoke at around 225°F. Then I put them in a pan or a dutch oven and add beef stock, Guinness, onion, green peppers, and garlic and let the beef braise in that liquid until it's fall-apart tender. Near the end of the braise, I add a cornstarch slurry to thicken up the liquid a little so I can use it as a sauce to pour over the ribs when I serve them over a bed of stone ground grits (or mashed potatoes or rice or whatever...).

Fire Roasted Broccoli that has been brined in a salt water solution and then tossed in a little olive oil and seasoned with garlic and black pepper...

Cornish Game Hen

Spatchcocked Cornish Game Hen to go with that broccoli... This was also brined overnight in a salt water solution. Then I dried it off, oiled it and seasoned with my own blend of salt, pepper, and garlic... I like to get a good bit of char on the outside without going overboard....
