Anyone knows how many shots one can take using 128MB, 256MB, 512MB and 1 GIG Compact Flash/Microdrive when using the Canon 10D and optimum resolution please?

you can go to www.canonusa.com and find the 10d manual in pdf form. there is a table in this document (at least I think there is) that may answer your question.

JPG:

1gb - approximately 400
512mb - approximately 200
256mb - approximately 100
128mb - approximately 50

RAW (with minimal size embedded jpg)

1gb - approximately 160
512mb - approximately 80
256mb - approximately 40
128mb - approximately 20

I shoot in Medium-fine on my D60. It usually says I can take between 330 and 360 pics when the card is empty and freshly formatted in the camera. Its a 512 mb card

I have some how captured 432 images on the 512mb card one time and 409 on another occasion.

Sometimes it has gone the other way and I was only able to capture 290 images or 310 images.

It has to do with ISO settings and the amount of detail that is in the image you are capturing that determines the file size of each image.
