Pinchante Du Canard: Once known as the "Goupille du Canard", this delicacy was renamed because nobody wants to eat a Pille of Goup, especially one that came from a duck. In contrast, every gourmand clamors for the tiny tasty treat that is now known as 'singing pin' of the duck or Pinchante Du Canard. At this writing, the tastiest of these 'pins' or as biologists would say, uvulae, belongs to the American Widgeon, who beat out the Mallard by the slimmest of pinchansons.
