I have noticed on some of my photos that after doing a simple level adjustment the colors were somewhat saturated and I have had to actually De-Saturate some of them before printing them.
Has anyone else experienced this and is this normal?
The settings on my camera are all standard and I do not adjust the conversion settings from RAW.

I pretty much always shoot with saturation turned down, or in RAW.
I find it easier to add it back in than take it out, but generally prefer the lower saturated results to start with.

I have definitely experienced this. Interstingly, it seems to be a bit dependent on the lens. I've mainly noticed that on shots taken with the 70-200 2.8, I find myself desaturating a bit, whereas with my consumer-grade 28-200 3.5-5.6, I find I often boost saturation slightly. I guess this is not totally unexpected, but the degree of difference still surprises me.
All this is purely "uncontrolled" testing. I plan on dong a controlled test (camera on tripod, saturated scene, manual mode, swap lenses, compare saturation) when I can do some outdoor work comfortably.
