I've seen these really cool pictures that people have take where just one part is color and the rest is black and white. One example is 'Rejuvenation,' by IbWhaples. How is this done?

This is the best example of this effect that I have seen.

It's generally done with the 'desaturation' of selected colors to stay within the rules of dpchallenge. If red is the only color visible in the photo, the photographer probably desaturated all the other colors using the hue/saturation tools in photoshop or other software.
