I would like some help with my first attempts to capture mountain streams. I was in the Rockies in Colorado last week and took a couple of shots. Any comments or suggestions would be helpful. I plan on returning to the area next month and spending more time "in the water"!

well I love the 2nd one. The lines take you right into the picture, and the backdrop mountain finishes it off superb. You ahve a good eye ;)
My first thing would be to burn some areas, the whole image is wishy-washy and a lot of the colour isn't coming out. By burning the back and sky, it gives a bit more depth. By dodging some areas, you can do this more-so.
I also would play with the channels and colours to bring some of the green down and the yellows/reds back up.
Below is a very quick rendition of my thoughts. But, most importantly always do what YOU like best. I like contrasty images, and either vibrant colours, or deep black & white contrasts. It's not for everyone ;)
The sky is a bit over blued, but I am late for a lunch date!

Look for cloudy days when taking these photos, it'll be a lot easier and gives more slower moving waters (i.e. blurred water movements):
