I owe some folks favors for helping me get my new Dodge Durango (which is a wonderful car by the way). I thought maybe I could bake some cookies. But I'm looking for something other than chocolate chip stuff. Any home makers out there with some family secret they wanna un-secretize?
He'p a mess'kin out!

Here's Grandma's Pineapple Recipe for ya....Can't remember how many cookies it makes just know they are really good!
1/2 cup butter
1 cup sugar
1 egg, beaten
1/2 tsp. vanilla extract
1/2 cup crushed pineapple, drained
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
can also add a touch of red food coloring to make them festive for holidays.
Cream butter & sugar. Add beaten eggs, vanilla, & pineapple & mix well. Combine flour, soda, baking powder, & salt. Add to sugar mixture. Mix well & drop by teaspoonfuls onto a greased cookie sheet. Bake at 350° for 10 minutes or until light brown.
Store in an airtight container with a slice of bread to keep the cookies soft, and replace the bread every other day.

slice the cookies off the roll and put them on a cookie sheet and follow instructions on the package. |

ssshhhhhhh don't tell my little boy but...add sprinkles to the top so everyone thinks you spent hours making them. =o) |

actually, i used egg whites, almonds (decimated in the blender) and sugar, and made some funky looking yummilicious cookies once. they were lovely, and were gone very fast. they were crunchy on the outside and gooey in the middle. Nice for a little snack. I should make them again. They didn't last long at all. |

This recipe is almost as easy as setz's. And they are truly delicious. A friend of mine at another site posted it.
Etta's Cake Mix Cookies
1 (18 1/4 oz.) Cake Mix
1/2 C. Oil
2 eggs, beaten
Combine and mix well. Drop by teaspoonfuls onto greased cookie sheets. Bake at 325°F. for 12 to 15 minutes. Makes 4 dozen.
(Optional: Stir in nuts, raisins, coconut, chocolate chips, peanut butter chips, or etc.)
I did one with a red velvet mix, then topped with butter cream icing. The originator of the recipe likes lemon cake mix with coconut. She does recommend avoiding carrot cake as the dehydrated carrots stay crunchy.

I'm trying to be good today and you're talking about cookies!
We actually made boiled cookies last night and they're calling to me. I wouldn't recommend these for company since they aren't very pretty (otherwise known as cow patties), but the kids love em. It only takes a few minutes, and you don't have to use the oven.
Ingredients:
2 cups white sugar
1/2 cup milk
1/4 cup unsweetened cocoa powder
1/2 cup butter
1 teaspoon vanilla extract
1/2 cup peanut butter
3 cups quick cooking oats
Directions:
1 In a saucepan combine the sugar, milk, cocoa, and margarine. Cook over medium high heat, stirring constantly, bring mixture to a boil and boil for 1 minute. * Remove from the heat and stir in the vanilla, peanut butter, and quick cooking oats. **
2 Drop spoonfuls of batter onto sheets of greased waxed paper.*** Let cool. Store cookies in an airtight container (we refrigerate ours).
* The trick is to get it to a full, rolling boil first (the entire surface will be covered with bubbles), and then time it for exactly a minute. If you don't time it right, they won't ever get hard.
** I usually stir it until it's cool and somewhat thicker. If you drop the really hot mixture on the paper, it tends to spread out too much.
*** You can also spread it into a cake pan and then cut into squares once cool.

Coffee Liqueur Raisin Cookies
This is a wonderful, chewy, just a little different oatmeal cookie. I have made them with many variations and all of them good. They taste the best if the raisins soak in the coffee liqueur overnight. Prep Time: approx. 10
Minutes. Cook Time: approx. 10 Minutes. Ready in: approx. 1 Hour 30 Minutes.
Makes 7 dozen (84 servings).

1/2 cup coffee flavored liqueur
1 cup shortening
2 cups packed brown sugar
3 eggs
1/2 cup milk
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups rolled oats
1 cup chopped walnuts (optional)
1 cup white chocolate chips (optional)
Directions
1 Place raisins in a small bowl, and add coffee flavored liqueur. Heat in
the microwave for approximately 2 minutes, or until hot. Set aside to cool
(overnight is great). Drain, and reserve liquid.
2 Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
3 In a large bowl, cream together shortening and brown sugar. Beat in
eggs, one at a time, then mix in milk and the reserved liquid from the
raisins. Combine flour, baking powder, baking soda, and salt; stir into the
creamed mixture. Stir in oats. Mix in the walnuts and white chocolate chips, if
desired. Drop by rounded spoonfuls onto prepared cookie sheets.
4 Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on
baking sheet for 5 minutes before transferring to a wire rack to cool completely.

If you want a more traditional cookie (involving more time and ingredients) you can try this recipe for soft chocolate chip cookies.
Ingredients:
4 1/2 cups all-purpose flour
2 teaspoons baking soda
2 cups butter, softened
1 1/2 cups packed brown sugar
1/2 cup white sugar
2 (3.4 ounce) packages instant vanilla pudding mix
4 eggs
2 teaspoons vanilla extract
4 cups semisweet chocolate chips
2 cups chopped walnuts (optional)
Directions:
1 Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
2 In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. * Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
3 Bake for 10 to 12 minutes in the preheated oven. Do not overbake.
* For a more professional look you can refrigerate the dough a couple of hours after making it. Then you roll it into cookie sized balls and lightly press them between your hands. The uniform thickness and temperature helps keep the edges from cooking a lot faster than the center. |

Better still, if you get the sugar-cookie style ones, you can add just about anything to them -- chocolate chips (though they taste different than other chocolate-chip cookies), bits of dried fruit (those work better), M&Ms or other candies, and, of course, sprinkles in all sorts of different styles.
The sad thing is, I actually make quite good home-made cookies, I just am too lazy to do it most of the time. :)
But anyhow, yeah, there're a ton of good recipes on allrecipes.com, which has a cookie specific site at //cookie.allrecipes.com/ -- although I kind of like the CMU rec.food.recipe archives at //www.cs.cmu.edu/~mjw/recipes better. |

With all the talk about cookies my little boy wants to add his two cents worth with the only recipe in the world the kid can remember...LOL thats cause it is so simple
1 cup peanutbutter
1 cup sugar
1 egg, beaten
Mix all together. Roll into small balls about 1 inch in size, press with sugar coated fork onto cookie sheet and bake at 350 for 9 to 12 minutes. |

These are to die for sugar cookies.. not the usual at all! They literally melt in your mouth! Best the first day, and part of the second.... if they last that long! :P
Sugar Drop Cookies
Ingredients
1 cup butter
1 cup vegetable oil
1 1/2 cups confectioners' sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
4 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 cup white sugar for decoration
Directions
1 Preheat oven 350 degrees F (175 degrees C).
2 In a large bowl, cream together the butter, oil, confectioners' sugar, and 1 cup white sugar until light and fluffy. Beat in eggs one at a time, and stir in the vanilla. Combine the flour, baking soda, and cream of tartar; stir into the creamed mixture. Roll dough into 1 inch balls, and then roll the balls in remaining white sugar. Place onto ungreased cookie sheets, and flatten with a fork.
3 Bake for 8 to 10 minutes in the preheated oven, or until the edges begin to brown. Cool on wire racks.
