Let's see those yummy tofu recipes...

Tofu Tacos

INGREDIENTS

* 1 (16 ounce) package garden herb tofu, crumbled
* 2 tablespoons vegetable oil
* 1 clove garlic, minced
* 1/2 cup chopped onion
* 2 teaspoons chili powder
* 1/4 teaspoon paprika
* 1/4 teaspoon cayenne pepper
* 1/4 teaspoon ground cumin
* 1/4 teaspoon salt
* 1/2 lime, juiced
* 1/2 cup tomato sauce
* 1/4 cup chopped fresh cilantro
* 10 medium taco shells, heated
* 2 cups shredded lettuce
* 2 tomatoes, chopped
* 1 avocado - peeled, pitted and diced
* 1 cup shredded Cheddar cheese
* 1/4 cup salsa

DIRECTIONS

1. Over a medium heat fry the tofu, oil, garlic and onion in a large skillet for 5 minutes. Add the chili powder, paprika, cayenne, cumin, salt, lime juice and tomato sauce to the skillet and stir. Cook for 3 minutes. Stir in the cilantro. Spoon mixture in a serving bowl.
2. Spoon the tofu mixture into taco shells. Top the mixture with lettuce, tomatoes, avocado, Cheddar cheese and salsa.

A favorite dinner. Yes, really. It's ridiculously fantastic straight off the skillet.

Lemony Asparagus, Capers and Crispy Tofu
1 8-oz. pkg italian-style baked tofu, cubed
2 tbsp olive oil
1 small red onion, chopped
3 large garlic cloves, minced
1 4-oz. jar pimientos
1/4 tsp crushed red pepper
2 lb. asparagus (in USA, this is two bundles), trimmed and cut into 1 1/2 inch pieces
2 tbsp fresh lemon juice
1 tbsp fresh lemon zest (optional)
2 tbsp capers (optional)
salt and freshly ground pepper to taste

1. Spray large non-stick skillet with cooking spray. Cook tofu cubes over medium heat 5-7 minutes, or until brown and crispy. Remove from pan and set aside.

2. Heat 1 tbsp olive oil in skillet over medium heat. Saute onion 3-4 minutes or until soft. Add garlic, pimientos and crushed red pepper, and cook 30 seconds more or until fragrant.

3. Increase heat to medium-high. Add asparagus and cook 3-4 minutes, stirring constantly or until asparagus is bright green and crisp-tender. Add lemon juice, lemon zest, capers, salt and pepper. Drizzle with remaining 1 tbsp olive oil and top with tofu cubes. Serve immediately.

This thread needs some spicing up...

Cajun Tofu:

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 lb Firm tofu drained and cut
-into 3/4" cubes
1 md Red bell pepper, finely
-chopped (about 1/2 cup)
1 md Green bell pepper, finely
-chopped (about 1/2 cup)
1 lg White onion finely
-chopped (1 cup)
1 c Chopped celery
2 Cans cooked/peeled
-tomatoes
4 Cans tomato sauce
1 Gallon water (3/4 gallon for
-thicker soup)
2 tb Finely chopped parsley
1/2 c Finely sliced green onion
-tops
2 tb Worcestershire sauce
2 ts Salt
2 1/2 ts Red pepper
2 1/2 ts Black pepper
2 ts Garlic salt
3 ts Paprika

* Fry in very hot olive or peanut oil to seal.

I can see it's time to post this hopes of broadening
your culinary horizons... Note the use of the
'trinity'.

Pour oil from above into bottom of stock pot, adding
enough to cover the bottom of the pot, if necessary.
Make a roux by adding an equal amount of flour,
cooking until thickened. Add the following:

Simmer for 25 minutes. Add drained tofu, place lid on
pot and simmer for another 30 minutes, stirring
occasionally. Add 3 or 4 fresh bay leaves and let
cool for 15 minutes. Reheat if necessary and serve
over steamed rice. Top with fresh parsley.

If a less spicy mix is desired, the amount of red
pepper can be reduced to taste.

If I served this to you, you'd never guess this one involved tofu unless I told you - which I wouldn't do until after you began raving about it since 90% of the people I know wouldn't even try it if they knew up front. Really really really really good. And high protein, too!

Tofu Chocolate Mousse
1/2 cup chocolate chips
2 packages firm silken tofu
1/4 cup unsweetened cocoa powder
1/2 cup maple syrup (or more, to taste)
1 tsp vanilla extract
1/2 tsp salt
1/4 cup Kahlua or other liqueur of your choice (I like amaretto)

Melt the chocolate chips by heating them in the microwave for 30 seconds at a time on medium power. Stir after 30 seconds and repeat the process until they are melted to a smooth paste.

Combine all ingredients, including melted chocolate, in a blender and blend until smooth.

Spoon mousse into bowls and chill 4-6 hours, until very cold.

1/2 pound ground beef, grilled so dripping red in center
Bun
Tomato
Mustard
Mayo
Lettuce

1 container silken tofu, preferably lite
1/4 cup unsweetened plain cocoa powder
2 tbsp natural, unsweetened peanut butter OR 1 tsp reuglar peanut butter

PREPARATION:
Blend or puree all ingredients in a food processor until smooth.
.

I don't think this will taste outstanding, but at least it's a very healthy dessert. I'll post some more recipes soon.
