When people shoot a subject in a studio against a fully white backgroud, how is the lighting set up to neutralize that background? Basically how is it so white? Is it just blasting it with way more light than the subject? I've tried a couple times and ended up having to do a lot of editing, when I know I should be able to capture it more in camera.

I would appreciate details as to what kind of lights and what setting are used.

Yeah, you need a light dedicated just to the background and it does need to be quite bright. You also need a wrinkle free background so it doesn't catch shadows. And lastly, make sure you model/subject is atleast 6 feet or so away from the background.

If the background ends up 2 or more stops brighter than the midtones on the subject, then you'll expose for those mid tones and the background will be all white.

It's just a case of keeping those lighting ratios, between the subject and background light. Easiest way to do it is to have the subject and background lit independently. For the smoothest results, particularly for larger backgrounds (e.g., people etc) its common to have two lights for the background, one on either side to ensure an even background. Single lights can be used to provide a more interesting falloff

Spot meter from a midtone on your subject.
Matrix metering will lead to an underexposed subject trying to compensate for the bright white background.
