Since RawShooter Essential works with the EOS 20D, does it stand to reason that it will also support the 30D (if I can ever get my hands on one)?

I would assume so. Worst case scenario: you have to get an upgraded version of RAW essentials

I would assume the RAW files would be identical to the 20D. Same sensor.

it's not the sensor that records the data to the card though. so that may very well not be the case if the software has been upgraded.
