So my roommate keeps making changes to PS and I can't revert...

This time she managed to change the way the crop tool resizes. It only creates perfect squares when I initially make the selection, and I can only make adjustments to it in the same manner. How do I change it to create rectangles of my liking?

Just change the dimensions in the boxes on the top tool bar.
ie. 10in x 8in or 10 x 8
edit: you can also set the resolution too if you wish, ( dpi )

That helps, but I'm still constrained by those proportions. I want to be able to make corrections on the fly. I don't know beforehand what I want the ratios to be.

Wow. I spend a couple of sessions with PS not being able to figure it out and after asking I finally get it.

If you hit the clear button on the toolbar it gets rid of any defaults. I was originally trying to do this by entering "0" but it made me enter a value.

Along the top tool bar, you should have a drop-down menu for "Style" when you are using the rectangular selection marquee tool. Be sure it is set to "Normal" and not "Fixed Size" or "Fixed Aspect Ratio." :)

for prints - you're better off using 'fixed aspect ratio' and setting it to the ratio for the print size you are aiming for.
