I have had a couple of differing opinions as to wheteher or not to go for a lens with or without IS for shooting F1. Can anyone help? Is is possible to turn the IS off on a Canon 75-300mm USM?

Yup, there is a button to turn it off (and it should be turned off when on a tripod).

Depends in part what you are trying to shoot.

If you want crisp, frozen images, you'll have to be shooting at such a high shutter speed, that IS isn't going to do anything for you anyway. You'll no doubt need at least a monopod.

If you want to do a lot of crisp pan shots, then certain lenses with IS might be useful. Only some IS lenses have the multi-mode 'pan' IS that only reduces vertical vibration. That may help for side to side pans. Other than that though, if it is so dark that you need IS, then F1 cars are just going to be a blur when in motion anyway.
