This is the photo's actual out of camera color.
This duck had no color.
Has anyone ever seen one like this before?

Female mallards can be pretty drab and seem a similar shape.
But I am far from expert with bird IDs. |

It may be a 'mongrel' duck. There are lots of odd looking ducks in my local park. It happens because of crossbreeding between species. And it gets worse over time... cross-bred ducks breed with other cross-bred ducks and some of them become freaky looking over time...

I have seen Widgeons in that kind of color but it almost looks like a Mallard hen in shape. This was at a zoo? Hard to tell with so many species and as John mentioned.

You didn't selective desat, God did.
Just because it's at a zoo doesn't rule out it's mongrelocity. Many freeloading vagabond ducks frequent zoos for their ponds and such. The zoo doesn't endorse them, but they make a good living as beggars. Someone could've been playing the Duck higher power and their monster escaped to run off and be a professional beggar.

Sorry, this is an American duck so I can't help you there.
When ID this in birdbook bear in mind that at least some ducks change colours according season and can have all kind of strange colours when changing. Furthermore males/females can be quite different.
From bodyshape I'd guess a dabbling duck, like mallard
Hope that helps you somewhat.
Cheers and good luck
