Carotte Sauvageby RebeccaComment: are you aware of a vegetable called 'salsify'? It's an old variant of the carrot and is currently very rare. It's something similar to the equivalent of a 'purple potato' - rich in Iodine - within the carrot family.
Very hard to find.
The name 'The Blue Carrot' which is often associated with French cuisine refers to this vegetable. |
