 Chicken stuffed with ricotta and spinach

chicken breasts (butterflied)
frozen spinach (defrosted and finely chopped)
pot of ricotta cheese (slightly whipped)

simply mix the ricotta and chicken together and spoon onto the chicken breasts before pressing shut then spooning the remainder of the cheese mixture over the breasts.

Bake in the oven for 20mins until cooked through and serve with a sharp salad.

Would have liked a little more DOF in this one...I want to see the rest of the dish, not just the corner of the chicken.
