 This is the olde-fashioned traditional way of tapping trees. Drill a hole in the tree, tap in the spile (the thingy with a spout) and hang a pail from the spile hook and put a lid through holes in the spile to help keep out debris like bugs, precip, bark etc.

Then you wait.
