Ingredients
18 cups of Water
1 cup opaque pearl tapioca
1 cup of sugar
14 Oz condensed milk
Pandan leaves
Tuna Fish


Tapioca Pudding

Boil 1 cup of opaque pearl tapioca in 12 cups of water for 10 mins. Simmer and pour 6 cups of water and let soak for 45 mins. Drain excess water while pouring additional water until the opaque pearl tapioca gets condensed.
Mix a handful of chopped pandan leaves and 1 cup of sugar with the condensed tapioca and cook in low until it start boiling. Pour 14 Oz condensed milk and cook for 2 mins while stirring.

Salted smoked tuna
Cook tuna in salted water. Let dry.
Use a bar-b-que with a lid. Burn coals till Grey then remove them slightly to side. Cut tuna up the middle and split in two halves. Sprinkle BIRCH bark and wood chips over the coals. Place the tuna on the opposite side of the grill away from the coal sand close the lid. Cook 1/2 per kilo since it depends in how large and heavy is the tuna. Calculate and you'll have Smoked tuna.

Garnish
Pomegranate, pandan leaves. Italian dressing.

Nicely done. The lighting, composition, color, contrast, key, and content are all spot on imho. Looks like 3 lights maybe? My only little nitpick is the spots on the plate. I don't know if it's part of the tuna or some spices or if it's intentional for presentation but for me it's a bit distracting.

I would have liked to see the background or plate be a different color. Right now thy bleach out the meat and pearly tapioca.

The smoked tuna sounds lovely, the pudding I would be willing to try. The image isnt grabbing me so much. Border is a bit heavy for my tastes, the drips on the plate (intentional or not) just look messy and the lighting doesn't do a whole lot for your tuna. Less bright and a slightly different presentation could have improved this image and highlighted your meal better.

Coming back to comment after voting earlier. Visually the composition is quite lovely with interesting angle, textures, and color. Lighting is good but there are a few blown highlights tending to a high key. Love how vibrant the red and green topping is on the pearl tapioca pudding. Not a big fan of the large black border - a larger view to give us more to 'taste' would have made this a stronger composition. For a food combo, I have to admit the pairing with something sweet & desertlike with that of smokey tuna fish is a bit odd. Weather it was done because it tastes good together or just for the aesthetics for the photo is a question...but sweet and salty/smokey might be a good pairing....Overall very nicely captured and done - 7.

The tapioca looks great, but the tuna is blown in the highlights, and framed like an after thought. If it has the same lovely lighting and glistening highlights the pudding has, it would be a ribbon winner.

Interesting mix of food, I bet it's decently tasty.
I'm not a fan of the giant black border. It feels like you are hiding something in this photo, and it makes the bright whites even brighter.
