It's quite simple, is grain sprayed with water. I take my 100mm macro lens and start 'hunting': while I'm moving back and forth I rotate the focus ring till something worth it gets in my viewfinder. Using a tripod is must!
For this one here I used iso 640, f5.6, 1/6.
While for the other one below I had iso 640, f3.5, 1/20
