I made this tonight. It was really good.
I don't usually measure so I will aproximate the ingredients.
For the sauce;
1 cup of ketchup
1 cup of vinegar (I used cider since its what I had on hand)
1/2 cup of soy sauce
1 12 oz can of pineapple chunks with its juices
1 12 oz can of water (used the pineapple chunk can)
1 large onion cut into large chunks
3 green peppers (they were small) chunked large
3-4 Carrots chunked large
1 cup of sugar (adjust to taste)
I soften the onion before adding the other ingredients but not really nessisary since It will simmer for an hour. Thicken it with cornstarch slurry.
This makes a huge pot full.
I served over whole grain rice which takes an hour to cook so it comes out at the same time.
Next I use boneless skinless chicken thighs and cut to large chunks and tossed in salted flour. I fried these in butter flavored crisco because I ran out of canola oil. Any chicken frying oil will do.
Garnish with chopped green onion.
