An Easter recipe made over Easter.

Apple Simnel Tart

Take a sheet of ready-rolled puff pastry, and roll out a sheet of white marzipan to the same size (actually slightly smaller) Spread the top of the pastry with apricot jam, then place the marzipan on the pastry, and turn over the edges to form a square.

Decorate with slices of Pink Lady apples in a random fashion.

Cook in a moderate oven, about 200 degrees C for approx 15 mins.

Meanwhile, make a glaze using apricot jam, caster sugar, and calvados or brandy to taste. Didn't have either of those so I used pear cider, which was fine for this.

Take the tart out of the oven, and cover it in the glaze. Put back in the oven for about 5 mins or so.


The final result was a bit sweet for me (and I have a sweet tooth) Perhaps less marzipan next time?

Don't know on which photo to comment. They all look delicious. Can imagine it was sweet. Baked marzipan! Must be sweeter than sweet.
(I've to try this some time). Nice series of the baking process. Wonderful shot of the end result. (except perhaps the green in the background).
