These are absolutely delicious. Here's the recipe:
1 (8oz) pkg cream cheese
1 egg
1 tsp. vanilla extract
3 TBL. brown sugar
4 1/2 TBL all-purpose flour
5 TBL white sugar
3/4 tsp ground cinnamon
3 TBL butter
3 TBL chopped pecans (or walnuts)
2 1/2 cups all-purpose flour
2 cups white sugar
2 tsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. salt
2 eggs
1 1/3 cups canned pumpkin
1/3 cup olive oil
2 tsp. vanilla extract
Directions:
1. Preheat oven to 375 degrees. Grease and flour 18 muffin cups, or use paper liners.
2. To make the filling: In a medium bowl, beat cream cheese until soft. Add egg, vanilla and brown sugar. Beat until smooth, the set aside.
3. For the streusel topping: In a medium bowl, mix flour, sugar, cinnamon and pecans. Add butter and cut it in with a fork until crumbly. Set aside.
4. For the muffin batter: In a large bowl, sift together flour, sugar, baking powder, cinnamon and salt. Make a well in the center of flour mixture and add eggs, pumpkin, olive oil and vanilla. Beat together until smooth.
5. Place pumpkin mixture in muffin cups about 1/2 full. Then add one TBL of the cream cheese mixture right in the middle of the batter. Try to keep cream cheese from touching the paper cup. Sprinkle on the streusel topping.
6. Bake at 375 degrees for 20 - 25 minutes.
Notes: I used Canola oil instead of Olive Oil. TBL = Tablespoon; tsp = Teaspoon. |

Nice one, I like this. :-) The composition is very neat! The ivy is a good idea around the basket, is it real or not? About lighting: well, I am a beginner, I can't deceide whether it's good or not yet, but when I reach that chapter and study it, i will tell you my opinion. May I keep the recipe? |

I agree about the plastic greenery and the lighting.
I have a three light set-up that cost me about $15 total including light bulbs. You don't need to spend rock star $$ to get good results.
This setup would look good on a breakfast table using early morning or evening window light.

The presentation looks great.
The lighting is so-so. I know it is hard for us without all the special gear to get a good indor shot, but did you try it with any natural lighting?
I also would suggest that you loose the plastic greenery
