GALETTE:
Cooking spray
*1/2 package refrigerated pie dough
*1/2 cup (2 ounces) shredded aged sharp Cheddar cheese
*5 ripe Bartlett pears, peeled, cored, and cut into 1-inch slices
*1 tablespoon lemon juice
*1/8 teaspoon ground nutmeg
*1/4 cup packed brown sugar
*3 tablespoons all-purpose flour

CARAMEL:
*1/3 cup granulated sugar

1. Preheat oven to 400 degrees
2. To prepare galette, line a jelly roll pan with foil, and coat foil with cooking spray. Roll dough into an 11-inch circle and place on baking sheet. Sprinkle crust with cheese, leaving a 1-inch border.
3. Combine pears, juice, and nutmeg in a large bowl; toss well. Add brown sugar and flour; toss gently. Arrange fruit on dough leaving a 2-inch border. (Pears will be piled high on dough.) Fold edges of dough toward center, pressing gently to seal (dough will only partially cover pears). Bake at 400 degrees for 30 minutes or until crust is lightly browned (filling may leak slightly during cooking). Cool Galette on a wire rack.
4. To prepare caramel, heat granulated sugar in a small heavy saucepan over medium heat until sugar desolves, stirring as needed to dissolve sugar evenly (about 4 minutes). Cook 1 minute or until golden. Remove from heat. Drizzle over galette. Yield: 8 servings

Critique Club critique--

I missed this one during the challenge voting, but would have given a score of 9 had I voted on it. In addition to looking absolutely mouth-watering, you have shot the subject quite nicely, in my opinion.

There were obviously a number of ways you could compose this shot, and no doubt you probably did that during your shoot. In any case, I find the composition you selected both unique and interesting, showing enough of the dessert while still leaving enough to my imagination to keep things interesting.

I think your choice of white balance to create a warmer tone worked very nicely to create a complementary atmosphere and overall improves the tone of the shot.

A couple of points for improvement, in my opinion, would be to:
1) Select a backdrop that is a bit less "busy", perhaps a solid color that complements your subject. While the colors and patterns in the tablecloth match nicely, there is enough going on that it detracts from your shot somewhat.
2) While the bright reflections on the dish work well to accentuate the shot, there is a small anomoly in the main reflection on the inner portion of the dish (at the 2 o'clock position) that I find distracting. My eye is drawn almost immediately to it.

i don't know what this is, but i want one! besides looking completely delicious, the colors, lighting and composition is wonderful. good choice of background...very complimentary to the food, both in color and with the autumn theme. excellent work. 10

YUMMMY!! This desert and photograph both look very tasty!! Its like a shot straight from a magazine! nice work! Only comment - It would be great if the lines in the table cloth straight rather than on an angle :)

The presentation is really good here, providing nice warm tones, very fall-like. Having the juices dribble down the sides and into the plate really sets the tastebuds drooling. There doesnt seem to be too much to the dish itself, but it has nice textures and the wonderful caramel-colored juices helps make it very appealing. Compositional is also well done.

Wow! This image is extraordinarily clear! Well done! I am not sure I like the composition, however, with so much table cloth showing. Yet I must say it is one of the most appetizing of all the shots!

The colors and the dish that you made really gives off a great feeling of autumn. Really nice color selection. The table cloth is perfect. The shinyness of the glaze seems really sweet. The light really helps to make the dish shine. Probably really tasty too.

Yummmmmmmmmm! This looks sooooooooo good and I cannot wait to see the receipe for this one. I love stuff like this. The food is perfectly shot, the silver tray really adds to the presentation but the table cloth then detracts, I know it's a Fall pear and you were probably going for a theme but I think a darker cloth would have made this a 10 for me and it still might be before I'm done but for now, a 9!

This certainly looks delicious! I like the simple presentation - not too busy. The slightly muted background color really helps highlight the browns of the glazing and the crust. I would like either the whole piece showing in the picture, or a symmetrical amount (only half vs more than half) Lighting is great, nice focus. 8

the lighting is one of the best so far but (the old "but" again) I have been spoiled by magazines like martha's and the like. I would have liked to see more of the galette and the place mat/table cover (have the same one) is lumpy/not flat and the placement of the tray pulls my eye right to it.

Yum! The dof is a little shallow, or needs to more shallow. one or the other. I like the contrast of the more formal silver platter with the casual table cloth.
