I realise this is only a happy snap but I am trying to find the best way to process the bright whites in bright sunshine (jacket & waterfall) without making them look dirty grey.

Any advice from you wedding shooters (anyone really) is appreciated.

I would concentrate on getting the water to look good to you. I would probably change the jacket color completely to try to tone it down. Maybe a mid to dark blue to work with her jeans. Keep the focus on her face and the falls. I like the tilt of her head - like she's soaking in the sun on a chilly day.

There's nothing wrong with a happy snap. I would prefer a darker background here, so the "curve" advice is a good starting point.

I don't shoot weddings, but I sometimes (often) "brighten" the whites by applying a Curves adjustment layer to the Blue channel only, either through a mask just to the whites or (often) to the picture overall.

Those are some awesome square rocks--I see a landscape macro there! 101 tips thread may be useful. If there is too much dynamic range for one shot, then we have tutorials here on HDR processing you might find helpful. Oh, & ask her to wear darker color jacket! "D
