 For 4.
Ca. 2 pounds salmon fillets.
Lemon pepper.
1 1/2 cups whole barley. (Brown rice or potatoes will do).
1/2 cup butter.
1/2 cup flaked almonds.
3 to 4 cloves garlic, finely chopped.
Vegetables of your choice.
Salt to taste.

Put whole barley in a pan with water (one part barley, three parts water) and boil for 40 minutes.

Cut salmon fillet in portions, sprinkle with lemon pepper to taste and bake in oven for 15 minutes at 170°C/340deg F.

Melt butter in a small pan, add finely chopped garlic and almond flakes. Heat for a couple of minutes, taking care not to burn it.

Put salmon, barley and vegetables on plates. Cover salmon with Garlic/almond butter.
Enjoy.
